If you need to make a super quick, healthy dinner, this technique is perfect to whip up in a hurry. Make the sauce, drizzle over the veggies and salmon, wrap it all up and you’re ready to go. It all cooks in about 15 minutes. And it’s all conveniently wrapped up in one neat little package so clean up is minimal.
- Zest of 1/2 an orange
- 1 t minced ginger
- 3 T soy sauce
- 1 T fresh orange juice
- 2 t rice vinegar
- 2 t sesame oil
- 1 t honey
- 2 cups broccoli
- 1 red bell pepper, seeded and thinly sliced
- 1/2 cup bean sprouts
- 4 6-ounce salmon fillets
- 1/3 cup diagonally thinly sliced scallions, for garnish
Preheat the oven to 425 degrees.
Combine the orange zest, ginger, soy sauce, orange juice, vinegar, sesame oil and honey together in a small bowl and set aside.
Cut 4 16”x12” aluminum foil pieces for cooking the salmon.
Lay the foil out on a work surface.
Evenly divide the broccoli, peppers and bean sprouts amongst the foil.
Season the veggies with 1 T each of the marinade.
Place a salmon fillet on top of the vegetables and season with an additional T of the marinade.
Fold all sides of the foil in to create a pouch.
Bake for 18-20 minutes until the fish is cooked through.
Serve the foil packets on plates and open carefully to serve.
